Since opening in September 2023, we've been working hard and fast to build Ria’s into something that brings many people joy through a simple glass and a slice. Now, as we look to expand, we’re looking for a hands-on and passionate Head Chef / Kitchen Operations Manager. Ria’s is one of London's top pizza and natural wine spots, specialising in Detroit-style and pan pizza’s. Recognized as one of the city's top destinations for pizza by both The Times and Time Out London, we've built our reputation on exceptional quality, innovative approach to Detroit-style pizza, and a carefully curated natural wine selection.
Key Responsibilities:
- Lead services and execute on our signature Detroit-style pizza
- Implementing processes, prep-schedules, training and systems
- Managing and overseeing our dough and prep schedules
- Building, leading and managing the kitchen team, including recruitment, training, scheduling, and performance reviews
- Maintaining and driving our pizza standards and consistency
- Managing food costs, inventory, and relationships with suppliers
- Ensuring compliance with health and safety regulations
- Reporting on H&S checklists, stock variance and GP margins, sales targets and quality audits
Cluster Head Chef / Kitchen Operations Manager additional responsibilities:
- For experienced candidates, opportunity to support, oversee and mentor the wider leadership team
- Leading a young management team and training up on budgets, processes and H&S compliance
- 35-40 hours service, 5-10 hours admin per week (4 shifts and 1 day admin)
Requirements:
- Minimum 5 years experience in a similar role, with specific experience in pizza-making
- Strong leadership and team management skills
- Strong understanding of dough production and stock management
